A Family recipe That Hits All the Comfort Notes

This classic chicken and rice dinner is a comforting family favorite. Juicy, seasoned chicken cooks to perfection alongside tomatoes, onions, and celery, while fluffy rice is prepared separately to soak up all the flavors. Round out the meal with your favorite vegetables and freshly baked biscuits for a complete, satisfying dinner that’s perfect for weeknights or a cozy weekend feast.

Cook Time: 60 minutes
ingredients
1 package bone in chicken legs or quarters (more depending on how many people you are feeding)
1 large tomato cut into cubes
1 small yellow onion sliced thin
3 stalks celery chopped (can use the leafy part)
2-3 chicken bouillon cubes
About ¼ cup ketchup
¼ cup water (may need to add more during cooking if drying up too fast)
Salt and pepper to taste
White rice

**Your favorite biscuits
directions
Chop up tomato, onion, and celery. Set aside.
Heat about 2 tablespoons of olive oil in large skillet over medium heat.
Once hot, add chicken. Season with salt and pepper. Brown both sides for a total of 8- 10 minutes.
Drain off excess oil/fat.
Add tomato, celery, onion, chicken bullion, ketchup, and water, then cover.
Turn heat to low and cook for 45 minutes to an hour flipping about every 15 minutes and monitoring the amount of liquid in the pan. Add more water if needed.
Cook rice according to package during the last 20 minutes of cooking time.
**Don’t forget to bake your biscuits and heat up your vegetable of choice as well!
