Ingredients


  • 1/2 cup all-purpose flour

  • 1 cup light brown sugar (packed)

  • 1 cup Pearson Farm Pecans (chopped)

  • 2 large eggs

  • 1 1/3 sticks butter (melted)


Directions


  1. Preheat the oven to 350F degrees.


  2. Grease well, 2 small muffin pans or 1 regular muffin pan.  


  3. In a medium bowl, beat egg until foamy, then stir into the melted butter until smooth.


  4. In a separate bowl, stir together the flour, brown sugar and Pearson Farm Pecans.


  5. Add the egg mixture with the flour mixture until just combined.


  6. Spoon the batter into the muffin tins.  Tins should be about 2/3 full.


  7. Bake at 350F for 20-25 minutes. Use a tooth pick to check for doneness.


  8. Don't over cook as they will be dry.
