Ingredients
- 1/2 cup all-purpose flour
- 1 cup light brown sugar (packed)
- 1 cup Pearson Farm Pecans (chopped)
- 2 large eggs
- 1 1/3 sticks butter (melted)
Directions
- Preheat the oven to 350F degrees.
- Grease well, 2 small muffin pans or 1 regular muffin pan.
- In a medium bowl, beat egg until foamy, then stir into the melted butter until smooth.
- In a separate bowl, stir together the flour, brown sugar and Pearson Farm Pecans.
- Add the egg mixture with the flour mixture until just combined.
- Spoon the batter into the muffin tins. Tins should be about 2/3 full.
- Bake at 350F for 20-25 minutes. Use a tooth pick to check for doneness.
- Don't over cook as they will be dry.
